Savoury Potatoes or as the French would say Pommes Boulangère.

 

Fed up with Mash and Roast potatoes? Here is a quick alternative potato dish.

Ingredients :

 

Approx 400g Potatoes

Approx 1/4 Pint white stock, Chicken or Veg

100g Onions

25-50g of Butter

Chopped Parsley

One Medium sized Pyrex, or similar, dish

 

Method :

 

1. Cut the potatoes into medium slices. Cut some thicker slices for the top of the dish.

 

2. Peel and slice the onions.

 

3. Place the sliced potatoes into the dish in a layer. Then add a layer of onions on top. Repeat until the dish is full. Remember to put the thicker slices of potato for the top. Add salt and pepper as you go.

 

4. Add some stock 3/4 filling the dish, put a lid on the dish.

 

5. Place in a hot oven around 220C for about 20 minutes, then reduce to 180C and cook for about one hour. Take out from time to time and firm the potatoes and onions down.

 

6. 20 minutes before the dish is finished take the lid off and add a knobs of butter on top and place back in the oven until brown on top. Take out and finish with chopped parsley.

 

To make this dish into a lunch in itself just add bacon pieces in between the potato and onion layers.
